Scrambled Tofu Fried Rice
Ingredients
- 1 cup extra-firm tofu
- 2 tablespoons olive oil
- ½ onion (finely diced)
- 1 medium clove garlic (minced)
- 2 teaspoons sesame seeds
- 1 tablespoon ginger (peeled and minced)
- ½ teaspoon cumin, ground
- ½ teaspoon ground turmeric
- 3 cups cooked brown rice
- 1 carrot (grated)
- 1 cup frozen corn kernels
- 1 cup frozen peas
- 2-3 tablespoons low sodium soy sauce
- salt and pepper to taste
Preparation
- in a bowl, crumble the tofu and set aside.
- place a large sauté pan over medium heat. heat the olive oil and add the onion. sauté until softened, about 3 minutes.
- add the garlic and cook, stirring occasionally, for 1 minute.
- add the sesame seeds, ginger, ground cumin, turmeric, and tofu. stir the spices until well-incorporated, about 2 minutes.
- increase heat to medium-high. add the rice and grated carrot.
- stir frequently until the rice sizzles.
- stir in the corn, peas, and low sodium soy sauce and cook for a further 2 minutes.
- season well and serve as desired.
